Now that we have made several breads in class, tell me what you think about the bread making process. Do you enjoy making fresh bread? What do you like most about it? What breads have you liked the best? Is there anything you didn't enjoy about the bread making?
I think making bread is fun. I enjoy every process except the fermentation time, because its often too long and some of the breads I want to make consume too much time for class. My favorite part about making bread is punching down and shaping the dough. Once its done i enjoy eating it, but when I take it home my family eats it all and they don't leave me any. >:(
ReplyDeleteWell, in my opinion, the bread making process takes patience even if its a straight one day dough. You have to let it mix, form gluten, and ferment/proof. Though the process takes patience and time, I quite enjoy making fresh breads because of the taste of freshness, the crunchy-ness, and the pride of knowing how to make my own breads. I think my three favorite breads are Challah bread, bagels, and Fougasse bread. To me , the bagels had the best overall taste and texture. The only thing I did not like about making breads was that in the class we do not have enough time to do the breads completely from start to finish in one day, meaning from measuring ingredients to the actual baking process.

DeleteThe bread making process is very time consuming, my least favorite part is the fermenting waiting. I do enjoy making fresh bread because the taste is alot better then store bread, Shaping the bread is my most enjoyable part even though it can be frustrating because u cant over work the bread. I have liked all the breads we have made so far, my favorite is between bagels, Challah, and Fougasse. They are each different then the other but i enjoy making each one. I didn't like that we didn't get to make as many breads and make different things with our breads like sandwiches or other recipes.
ReplyDeleteOf course I love making fresh bread, there is nothing better than warm bread. The only thing I didn't like was how short of a shelf life it had before it went stale. It would be difficult making it at home without a proof box. my favorite was probably the Cuban bread because I used it to make a soup bowl and it was very easy to clean up.
ReplyDeleteI love making fresh breads because its so much better than buying it at the store. The only part I don't like is the fermentation time. It takes too long to let it sit and takes a lot of our class time. Although we get to clean the kitchen during that process, making chef a happy chef! I do love making breads from scratch though! My favorite was the Cuban bread because you could shape it in little rolls or big bread bowls and its not hard to make.
ReplyDeleteLearning about bread and then applying that information during hands-on labs to make fresh bread has probably been one of my favorite things I've done in Culinary. I love being able to see a few simple ingredients transform into something so delicious. I think it's much easier to learn the hands-on and how-to of making bread than learning the scientific aspect.
ReplyDeleteEven though at times it can be very long, I enjoy the process and at the end, it is definitely worth the wait. I like shaping the bread, but at times it can be very frustrating to form it into the proper shape.
Cuban bread and Italian bread are some of the breads I liked best.
I really like making bread. My favorite to make was the braided bread. It was the most fun. I liked the Italian bread the most. I like shaping the bread the best.
ReplyDeleteI love the bread making process, I think it is very easy and rewarding. I like to be able to shape the bread into so many different shapes. the soft rolls were my favorite, they were so soft and were really good. The only thing I don't enjoy is having to measure out the exact amount of everything
ReplyDeleteThe bread making process is interesting and fun. I enjoy making fresh bread It tastes better to me. I like having just a couple of simple ingredients and then it forms into a soft dough. I think my favorite bread so far is the Italian bread. The only thing I don't like about the bread making process is shaping the dough because after I'm done the dough that is left on your hands dries and it makes my hands feel weird.
ReplyDeleteBread making is very different kind of cooking, it involves precise procedures, and lots of science. It amazes me how many different things can be made from a simple flour yeast water mixture. I find it amazing that those three ingredients can make so may different things. I enjoy all parts of bread making. I am actually doing my senior project on the history of bread making. :)
ReplyDeleteAlthough the bread making process was at times, annoying and very drawn out I really enjoyed it because I feel like once you have done it once or twice you start to get the hang of it and it actually becomes very enjoyable. Once I got the hang of scaling and shaping and all the other good stuff I really did enjoy making fresh bread especially since all of us made it into a mini competition on who's bread would look better. What I enjoyed most was just watching the whole process come together and seeing the finished product of the loaf of bread or bread rolls, in all honesty its actually kind of fascinating, the bread I likes most was definitely the sweet rolls, they were perfect in size and just cute and adorable and they tasted good too! The thing I didn't like about the bread making process was measuring out the dry ingredients, or any ingredients for that matter, I guess because that's just the "more boring" process of the fresh bread making section.
ReplyDeleteAt first I thought making the bread was hard, but later on it got easier. I enjoyed making all kinds of bread from different countries. there was nothing I didn't like about the unit it was a fun experience
